Is it possible to upgrade from Sparky6 to Sparky8

My system at the moment is working perfectly, version 6.7, Po-Tolo, Bullseye,no problem at all !

Using appropriates source list, should I upgrade directly to Sparky version 8 ?

No, not directly.
You should upgrade Sparky 6 to 7 as first.
Then reboot to check is everything ok, then ->
upgrade to Sparky 8.
