Just had My phone 'rooted' installing Ubuntu LXDE - is it possible to install Sparky ?

Sparky? No. We (Pavroo mostly) prepare only x86 and AMD64 versions of it. You can however try to use Debian, which has a port for ARM-based devices. That's the closest thing to Sparky you can get (as Sparky is 99% Debian-based).
There's no such thing as "impossible". :)
